Do the filenames stay the same?
Yes, only the extension changes, so the ZIP mirrors what you put in. That matters when the images are referenced by name from somewhere else.
Is metadata preserved?
You choose. Keeping EXIF preserves camera settings and capture dates but also GPS coordinates, which is worth stripping before publishing anything taken at home. Stripping it also shaves a little off each file.

Yes, once the page has loaded once. The engine is cached by the browser, so you can turn off your connection, reload the page and keep working. That is a useful side effect of doing the processing locally rather than a separate offline mode you have to enable.
